With Veganuary in full swing, make the most of your money by trying these budget vegan recipes!

From spaghetti to brownies, there are endless vegan dishes for you to try out for as little as £1.

The start of the year marks a new start to your diet, so don’t miss out on trying something new.

As we grow more environmentally conscious, CBJ Target is taking a look into four quick and easy recipes to introduce you to the vegan lifestyle.

Beans Spaghetti – Estimated £1

Ingredients:

  • 200g Spaghetti (30p)
  • 200g Baked Beans in Tomato sauce (25p)
  • 200g Bolognese Pasta sauce (30p)
  • 1/2 Red onion (15p)
  • 1/6 tsp Salt
  • 1/2 tbsp Paprika
  • 1 1/2 tbsp Olive oil

Quite a simple dish to start us off, choose this dish to ease you into the vegan lifestyle.

While boiling the spaghetti place the olive oil, salt and chopped red onion in a sauce pan.

Cook for about five minutes before adding the Bolognese sauce, paprika and beans.

Cook for another another 10 minutes, and then drain the pasta.

Finally mix them both and enjoy this vegan friendly spin on beans and pasta.

Vegan Falafel Wrap – Estimated £1.30

Ingredients:

  • 1 Tortilla wrap (15p)
  • 2-3 Falafels (60p)
  • 1 tbsp Guacamole (20p)
  • 1/2 tbsp Vegan mayo (15p)
  • 50g Iceberg lettuce (15p)

For a meal that is as fast as it is cheap, the vegan falafel wrap is one of your best options.

You just need to mix the mayo with the guacamole, spread it across the tortilla and add the falafels and lettuce.

After folding it you are ready to go.

One-pot vegan Linguine – Estimated £1.10

Ingredients:

  • 100g Linguine Pasta (20p)
  • 200g Tomato Passata (15p)
  • 3 tbsp Olives (15p)
  • 3-4 Slices of sundried tomato (40p)
  • 1 Red chili (20p)
  • 1 tbsp Olive oil
  • 1/6 tsp Salt

For a more complex meal try a vegan one-pot linguine.

Start by placing the pasta flat on the bottom of a saucepan, and then covering it with the passata.

Next add roughly 125ml of water and set the pot to simmer.

Make sure to keep stirring so that it does not stick to the pan.

Next get the other ingredients in the mix, by chopping up the tomatoes and slicing the olives and the chili.

Add them to the pan along with the salt and olive oil.

Cover the pan and wait until the pasta is completely cooked, stirring regularly in the process.

Finally, enjoy your serving of vegan friendly linguine.

Vegan Brownie – Estimated £1.70

Ingredients: 

  • 25g Cocoa Powder (30p)
  • 100ml Oat milk (20p)
  • 90g Self-raising flour (<10p)
  • 75g Light brown sugar (25p)
  • 50ml Vegetable oil (10p)
  • 125g Dark chocolate (80p)

For a sweet treat try some vegan brownies.

Before starting the recipe, make sure you have a baking tray with baking paper and that you pre-heat your oven to 170 degrees Celsius.

Start by melting the dark chocolate in a saucepan, whisking it so it does not burn.

Slowly pour in the vegetable oil as well as the oat milk until it is all mixed together. In a separate bowl add and mix the sugar, flour and cocoa powder.

After both mixes are done, add the powder mix into the liquid chocolate mix and give it a stir.

Finally evenly spread the mixture into your baking tray and put it in the oven for about 15-20 minutes.

Afterwards, enjoy your sweet, dairy free, treat.
